Delicious and beautiful detox salad with Dijon dressing

So, as everyone’s still in detox mode, I wanted to create a beautiful and delicious detox salad, packed full of ingredients which encourage detoxification but which won’t leave you hankering for something else when you’ve finished eating it. The key to this is to include plenty of good fats and protein, and this dish provides these in abundance. But hey, guess what? It’s not fattening! The ingredients that I used for the salad, and their health properties, are as follows:

Watercress – classed as a ‘bitter’ vegetable, it stimulates the production of digestive secretions in the stomach, and also supports the liver. It is also packed full of Vitamin C and beta-carotene, which are important anti-oxidants.

Grated carrot – another great source of the anti-oxidant beta-carotene, of course, as well being cleansing for the liver.

Grated beetroot – just the deep colour of this vegetable raw tells you it’s packed full of goodness! Beetroot is amazing for the liver and is also very high in folic acid.

(I grated the carrot and beetroot together in the Magimix. It took all of 3 seconds)

Avocado – a perfect food as far as I’m concerned! It is a complete protein, and an amazing source of beneficial fats which help to boost HDL cholesterol and reduce inflammation

Pomegranate – most of its press is as a cardio-protective food, which is absolutely true, but it is one of the richest sources of anti-oxidants and therefore amazing for liver and skin health as well.

Pumpkin seeds – another protein food to stop you feeling hungry, pumpkin seeds are also very rich in zinc and those all-important omegas to reduce inflammation and promote brain health.

Eggs – yet another complete protein. They are an excellent (I’m not going to do the pun!) source of choline which helps to break down fats. The sulphur in eggs also helps with liver detoxification, which is why I included them in this detox salad.

For the dressing I included:

1 tsp Dijon mustard
1 tsp pomegranate vinegar (I don’t expect you to have this in your cupboard, but I got some for Christmas!)
1 tsp balsamic vinegar
1 tsp sesame oil
1 tbsp extra virgin olive oil
Himalayan crystal salt and freshly ground pepper.

The deep colours of this salad are so just inviting, you can feel it doing you good with every mouthful. I happily munched the entire bowl in one sitting and it kept me going for several hours!
