Easy Summer Holiday Supper

With the summer holidays now upon us, you might not have time to do as much food shopping as usual. This easy summer holiday supper is made entirely from frozen vegetables and store-cupboard ingredients!

Keeping your freezer well-stocked with things like vegetables, fish and prawns means you can always put together a healthy meal with little preparation when you’ve not managed to do a fresh food shop.

Having a good variety of other non-perishable ingredients like tinned beans, herbs and spices, brown rice, quinoa and noodles means you can create different flavoured suppers at the drop of a hat.

I’m usually quite good at having plenty of fresh food to hand, but last week I found myself with…shock, horror…nothing for supper! Thankfully I had half a bag of frozen butternut squash and half of bag of frozen cauliflower lurking in the freezer and so I whipped up this delicious veggie curry using those two ingredients as my inspiration. As luck would have it, I also found a frozen fillet of fish in there as well so I topped it with that.

It was so simple and quick to prepare, and really tasty. 

So do make sure you stock up on frozen veg and you won’t need to order a greasy takeaway after a day around a theme park (although I fully appreciate that making a phone call and having your dinner delivered may sometimes trump making it yourself, even if it is as easy as this!)


Frozen Vegetable Curry
Serves 2
A super-easy supper made entirely from frozen vegetables!
Prep Time - 10 min
Cook Time - 20 min
  1. 1 tbsp coconut oil or groundnut oil
  2. 1 onion, chopped
  3. 1 clove garlic, crushed
  4. 150-200g frozen butternut squash
  5. 150-200g frozen cauliflower
  6. 1 tin tomatoes
  7. 1 tbsp mild curry powder
  8. 1/2 tsp black onion seeds or caraway seeds
  9. 1/4 tsp cayenne pepper or chilli powder (to taste)
  10. 1/4 tsp Himalayan or Sea salt
  11. Black pepper
  12. 1/2 tsp dried parsley
  13. 150mls boiling water
  14. 100g frozen peas
  1. Heat a large saucepan over a medium heat and add the oil.
  2. Soften the onions and garlic for 2-3 minutes.
  3. Add in all the other ingredients (except the peas).
  4. Cover, and simmer for 15-20 minutes until the vegetables are soft.
  5. You may need to simmer uncovered if it's looking a bit watery.
  6. Towards the end, add the peas and cook for a further 2 minutes.
  7. Delicious as a simple supper on its own, topped with white fish, or with prawns stirred in.
